Avocado Caprese Salad

A couple of my go-to keto and low carb snacks are avocados and cheese. This quick and easy recipe includes both with some sweet cherry tomatoes, zesty Primal Kitchen Vinaigrette, and basil!

For this recipe, all you need is 1 avocado, a handful of cherry tomatoes, about 1/4 cup of mozzarella pearls, lightly dried or fresh basil leaves, and a couple tablespoons of Primal Kitchen's Balsamic Vinaigrette.

Slice the avocado. I like my avocado in large slices, but you can chop it into smaller chunks if you like. I also like my cherry tomatoes whole, but you can slice them if desired. I use fresh mozzarella pearls because I really enjoy the soft texture of the cheese in this recipe. It pairs really well with the vinaigrette, too!

Drizzle Primal Kitchen's Balsamic Vinaigrette over the top. I used a couple tablespoons, but you can use any amount you desire. This recipe is very basic, so you can fine tune it to your pallet if you like!

Sprinkle some basil over the top then toss the avocado, tomatoes and cheese in the vinaigrette and you're done! Quick and easy! This can be served as a side dish, or turned into a main dish by topping it on a salad with some yummy chicken breast!
